Bombay Veg Toast / Bombay Veg Grilled Sandwich


Bombay veg toast sandwich is a popular street food sandwich recipe in mumbai, I have seen people go crazy over this simple and delicious sandwich.... This is made with white bread, green chutney, veggies, cheese and they are grilled on both side and serve with sliced carrot or tomato ketchup as a evening snacks.. 


There are so many variation of making bombay sandwich toast recipe, In some places I have seen people adding use raw onion and capsicum, But my hubby don't like to have like that, so I toss the veggies, lightly in butter and add to the sandwiches.. The flavor of green chutney immersed into the bread and the veggies, cheese make to comforting breakfast or a evening snacks or a dinner too..

INGREDIENTS :

Bread slices - 10 or as needed
Butter - 2 tspn + brush on the top
Green chutney - 1/2 cup / as needed
Onion - 1 (sliced)
Capsicum - 1/2 (sliced)
Carrot - 1 (cut them into strips)
Potato - 1 (boiled and mashed)
Chaat masala - 1/2 tspn
Basil leaves - 1/2 tspn
Pepper powder - 1 tspn
Ginger garlic paste - 1/4 tspn
Coriander leaves - few (chopped)
Salt - as needed
Mozzarella cheese - as needed (grated)

METHOD :

  • Heat a pan with some butter and add in onion, capsicum and toss it lightly..
  • Add in ginger garlic paste and mix well along with onion..
  • Now add in carrot and toss well, Mashed potato and mix well for 2 mins..
  • Add in salt, pepper powder, basil leaves, chaat masala and mix well.
  • Atlast add in chopped coriander leaves and mix well.
  • Filling is ready, keep aside..
  • Prepare your green chutney and keep aside..
  • Grated some cheese and keep aside..
  • Take your bread slices and spread some green chutney over it..
  • Spoon some filling over it, and spread some grated cheese over it..
  • Now cover it with another bread slice..
  • Place it in grilled toaster and grill it till they done..
  • Remove them to a board and slice themm.
  • Serve hot with slice of carrot or tomato ketchup..

Take all your ingredients
Heat a pan with butter
Add in onion and capsicum
Toss it lightly
Add in ginger garlic paste
Toss along with onion
Add in sliced carrot
Toss it lightly
Add in mashed potato
Add in salt, pepper powder, chaat masala, basil leaves
Add in chopped coriander leaves
Mix it well, keep aside
Take your bread slices
Apply some green chutney
Spoon some stuffing
Add some grated cheese
Cover it with another bread
Spread some butter over it
Place it on the grilled toaster
Close the toaster and grill it untill they done
Remove it to the board and cut them into triangles
Serve it with sliced carrot
