Thenkuzhal Murukku Recipe


Thenkuzhal murukku recipe is a very good crispy evening snacks and in our home we make this for many festivals... As you know during festival days, we used to share the snacks and sweets to the friends and relatives and we cannot affords buying them from the shop. So usually we make them in our home and thenkuzhal is one of the common recipe...



My anuty is an expert in making various snacks and I learn't this recipe from her... Thenkuzhal is simple and tasty snacks made from rice and roasted urad dal flour... I have already post Urad dal flour in my blog...Today i am sharing with you thenkuzhal murukku made using the wet grinder method... somebody use store brought rice flour or murukku mavu / flour....

Preparation time : 15 mins
Soaking time : 2 hours
Cooking time : 2 mins per batch..

INGREDIENTS :

Rice - 1 kg (soaked in water for 2 Hours)
Roasted urad dal powder - 2 1/2 cup
Cumin seeds - 5 tbspn
Sesame seeds - 5 tbspn (black)
Asafoetida - 2 tbspn
Salt - as needed

Oil - for frying..

METHOD :

  • Take rice in a big bowl and soaked it for 2 hours.
  • Then grind it in a grinder and make it as a fine paste..
  • Then transfer it into a mixing bowl.
  • Now pour it in a clean kitchen towel to drain water...
  • Upto 5 to 7 mins and then the flour is ready to make...
  • Take out from the towel and transfer it into a mixing bowl..
  • Now add in urad dal powder, sesame seeds, cumin seeds, asafoetida and salt mix well with your hands..
  • Make sure the dough must be soft pilable dough...
  • Prepare a plate with wet towel and keep aside..
  • Take the star holed plate in a three holes murukku press and fill it with prepared dough...
  • Heat a oil in a kadai, Meanwhile draw Thenkuzhal murukku in circles in a wet towel...
  • Take the murukku circle carefully and drop one by one into the oil...
  • And fry it in medium flame. Fry both sides till golden colour or the bubbles ceases.. 
  • Take it out and place it in the oil strainer with a paper towel to remove excess oil and alow to cool...
  • Store it in air tight container and serve..

NOTES :

  1. Those who are trying it for first time can half the ingredints mentioned above..
  2. You can also use oil or butter for preparing the dough but i didn't use as i feel the murukku stays fresh for long period..
  3. I use coconut oil for frying you may also use groundnut oil...



PICTORIAL :

I take 1 kg
Soak it for 2 hours
Drain the water completely
Grind it in a grinder
Make it a smooth paste
Now it done
Transfer it into a vessel
Then pour it in a towel and let it stay for 5 mins
Now take the towel edges towards the centre
Now it's ready
This is in correct consistency
Prepare youe urad dal flour
Transfer the dough in a vessel
Add in urad dal flour
Some cumin seeds
Sprinkle some sesame seeds
Then salt
Asafoetida
It's time to mix
Mix evenly



Now the dough is ready
Prepare a white cloth in a plate
Heat the pan with oil
Take this murukku press and this shape
Fill it with dough
Sueeze it out in a circular motion
Now it's done
See how superb is this
Take it carefully
Drop it one by one into the heated oil
Like this
Drop one by one carefully into the oil
Keep it medium flame
Now flip it carefully

Leave it for 1 mins



Then flip it 
When the oil fully subside
Now it's time to take it out
Drain it in a oil stainer
Repeat the process for the rest of the dough
Now it's done
Look's yummy
Serve

    1. Measurement in the tumbler may different according to the size..
      You can use measuring cups to get a perfect measurements..
