Veg Frankie / Mixed Vegetable Mixture Wrapped In Roti


Veg frankie is a simple and rich version of hi-fi wrap recipe rolled with mixed vegetables... Usually the maida roti is precooked and ready and stuffed with vegetables or meat mixture, then they are rolled and serve with mayo or ketchup... 


But here Iam using all purpose flour / maida, I skip it and make the roti with the whole what flour which is more healthy than the usual ones.. The wrap is rolled with mixed vegetables and potato patty, vinegar, grated cheese over the stuffing, then they are enclosed with a roti roll....


This veg frankie is a yummy snacks mostly loved by kids... This crispy snacks is little crispy on outside and soft on the middle... So I hope that you must try this recipe and let me know it's comes out from you...

INGREDIENTS :

FOR THE ROTI :

Whole wheat flour / Atta - 2 cups
Salt - as needed
Ghee or oil - 1 tbspn
Warm water - as needed
Oil - for frying

FOR POTATO PATTY :

Potato - 1 cup (boiled and mashed)
Garlic - 2 cloves (chopped)
Chilli powder - 1 tspn
Chaat masala powder - 1 tspn
Salt - as needed
Coriander Leaves - few (chopped)
Oil - 2 tbspn

FOR ROLLING :

Cabbage - 1 cup (chopped)
Carrot - 1 (thinly peeled)
Vinegar - as needed
Tomato ketch up - for spreading
Grated cheese - as needed

METHOD :

FOR ROTI :

  • Combain all the ingredients in a wide bowl, and knead to form a soft dough..
  • Cover the dough with a bowl, rest for 15 mins..
  • Knead them again and divide them into a small balls..
  • Roll them into roti, heat the tawa and cook each roti lightly with little oil on meduim flame and keepaside..


FOR POTATO PATTY :

  • Cook, peel and mash the boiled potato and keep aside..
  • Heat a kadai with some oil, add in chopped garlic and toss well till light golden..
  • Add in mashed potato and add in chilli powder, chaat masala and salt..
  • Mix it and keep it low flame for 2 mins and add in chopped coriander leaves, mix well. Keep aside..


HOW TO PROCEED :

  • Take the roti first, spread some ketchup over it..
  • Sprinkle some chopped cabbage, place the potato patty and pour some vinegar over it..
  • Now add in peeled carrot slices and sprinkle with some grated cheese..
  • Now fold the sides to cover the roll. Repeat on the other side as well, Bring to roll tightly and stick up the edges with tooth pick..
  • Serve immediately and enjoy..


PICTORIAL :

Take wheat flour in a bowl
Add in ghee and salt
Rub with your hands
Add in warm water 
Knead it well to form a soft dough
Now the soft dough is ready
Cover it with a bowl for 15 mins
Divide the dough into equal balls
Roll them into roti
Place them in a tawa
Cook well by rolling with your hands
Filp it and cook well
Now it started to bubbles up
Apply some oil over it
Now all the roti are done, keep aside
Take your ingredients
Boiled and mash the potato, keep aside
Peel the carrot with peeler into long strips, keep aside
Now chopped some fresh cabbage, keep aside
Heat a pan with oil
Add in chopped garlic
Toss till light golden
Add in mash potato
Mix it well
Add in chilli and chaat powders
Season with some salt
Mix it well for 1 mins in low flame
Add in chopped coriander leaves
Mix it well, keep aside
Take your roti
Spread some tomato ketch up
Sprinkle some cabbage over it
Now make a log out of potato and place it 
Spoon some vinegar
And then carrots
Sprinkle some grated cheese over it
Fold the sides like this
Repeat on the other side as well
Bring to roll tightly 
Stick up the edges with tooth pick..
Serve immediately
