Arachu Vacha Muttai Kuzhambu / Udaitha Muttai Kuzhambu


Udaitha Kuzhambu / Arachu Vacha Muttai Kuzhambu is one of the famous recipe from my chitti's recipe collections... This is stylish north indian egg curry that makes for a great sidedish for chapathi and white rice.. Here the wonderful thing is adding broken the eggs directly on the curry and cook it... 


There are many way to make egg curry but this is a traditional way of making Indian regional egg variety.. So I hope that you must try this recipe and let me know it's comes from you..

INGREDIENTS :

Gingelly oil - 2 tbspn
Mustard seeds - 1 tspn
Shallots / Small onion - 1 /4 cup (chopped)
Curry leaves - few (chopped)
Eggs - 4
Tomato - 4 (large, chopped)
Turmeric powder - 1/2 tspn
Salt - as needed
Water - 1 cup

TO ROAST AND GRIND :

Dry chilli - 10 to 12 nos
Coriander Seeds / Malli - 2 tbspn
Pepper - 1 tbspn
Cumin seeds / Jeera - 1 tspn
Coconut - 1/4 cup (fresh, grated)
Shallots / Onion - 12 to 15
Gingelly oil - 2 tbspn

METHOD :

  • Heat a pan with oil add in coconut, shallots and roasted them till golden..
  • Now add in chilli, coriander seeds, pepper, cumin seeds, and mix well.
  • When the nice aromacomes from it, switch off the flame..
  • Allow to cool completely, Grind them into a fine smooth paste..Keep aside..
  • Add 2 tbspn of oil in a pan add in mustard, allow to crackle..
  • Add in chopped shallots and curry leaves, mx it well.
  • When the onion became golden brown, Add in tomato, salt, and mix it well.
  • Keep tossing till the tomato became mushy..
  • Add in masala paste and turmeric powder, mix it well.
  • Now add a cup of water and allow to boil..
  • When the raw smell goes, now check for salt and spicyness.
  • Now crack open a egg and drop them into the curry..
  • Otherwise crack open the eggs in a bowl, and drop into the curry carefully...
  • Leave it undisturbed and close the lid, so egg turn firm or cook till the eggs are done..
  • Don't stir the curry till the eggs are done..
  • Allow the curry to boil for 2 to 3 mins..
  • Till the oil floated on the top of the curry..
  • Enjoy..Serve hot with white rice and chapathi..


PICTORIAL :

Take your ingredients for roasting
Heat a pan with oil
Add in coconut and shallots
Roasted them in oil
Roasted them, keep stirring
Till golden brown
Add in other spices 
Mix it well, till the aroma comes out
Transfer them to a plate, cool them
Take them in a blender
Make it smooth paste
Take all your ingredients
Heat a pan with oil
Add in mustard seeds
When they crackle, add in shallots and curry leaves
Toss well till golden grown
Now it done
Add in chopped tomatoes
Toss it well
Add in salt
Cook till they mushy
Add in masala paste
Mix it well
Add in turmeric powder
Add a cup of water
Mix it evenly
When the bring to boil, till the raw smell goes
Crack open egg in a bowl
When the oil floats on the top
Pour the egg carefully in to curry
Slow the flame
Cover it with lid for 3 mins
Now the eggs are done
The kuzhambu is done, till the oil seperates
Transfer them to a bowl
Enjoy with white rice..
