Cauliflower Peas Kurma - North Indian Style


A simple and delicious kurma that goes along with any type of chapathi / parathas or variety rice.. This kurma is a made with a flavor of onion tomato cashew gravy and by adding kasuri methi make the dish delicious and flavorful.. But it comes out really good.. 


While you are cooking this gravy your family and will ask you what you are cooking! that's much flavorful creamy based kurma, my total family loves it... They requires simple ingredients and easy to make..

INGREDIENTS :

Cauliflower - 300 grams / 2 cups (florets)
Peas - 1 cup (I use frozen)
Turmeric powder - 1 tspn
Water - 1 cup

FOR MASALA :

Onion - 2 (roughly chopped)
Tomato - 2 (roughly chopped)
Ginger - 5 to 6 small pieces
Garlic - 4 to 5 pieces
Cashew - 3 to 4 pieces
Salt - 1/2 tspn
Oil - 2 tbspn

FOR GRAVY :

Coconut Oil - 3 tbspn
Fennel seeds - 1 tspn
Cinnamon sticks - 3 small pieces
Onion - 2 (finely chopped)
Chilli powder - 1 tbspn
Coriander powder - 1 tspn
Garam masala powder - 1 tspn
Turmeric powder - 1/2 tspn
Kasturi methi - 1 tbspn
Water - 1 cup
Coriander leaves - few (chopped)
Salt - as needed

METHOD :

  • Take cauliflower and seperate the florets from it and keep aside..
  • Now take the frozen peas in a bowl, keep aside..
  • If you are using dry peas soak it for 2 hour and cook it for 2 whiatle and use it
  • In a sauce pan add in cauliflower, water, turmeric powder and cook it for 3 mins..
  • Drain it and keep aside..
  • Now let's prepare the masala, for that heat a pan with oil, add in onion, tomato and cook for 2 mins..
  • Add in ginger and garlic pieces and cook for 5 to 6 mins by add little salt..
  • When they became soft and mushy, remove it from the flame and cool completely..
  • Now add them to a mixer and add in cashew pieces ad make it a fine paste, keep aside..
  • In another pan add coconut oil, fennel seeds when they sizzle, add in cinnamon sticks and onions..
  • Saute well till they became soft, add in masala paste and mix it well.
  • Now add in spices powder and toss well along with onion tomato mixture..
  • Add in cauliflower and peas and mix well with masala for 1 mins..
  • Add a cup of water and mix it well. cook it for 10 to 15 mins..
  • Till the veggies done, and add in kasuri methi and mix it well.
  • Cook it for another 5 mins, and add in coriander leaves..
  • Mix well, till the gravy became thick..
  • Transfer them to a serving bowl..
  • Enjoy with chapathi..

PICTORIAL :

Take cauliflower florets and peas (I use frozen)
Take cauliflower in a sauce pan
Add in turmeric powder
Add in water
Mix it well
Bring to boil for 2 to 3 mins
Drain it
Take the ingredients to grind 
Heat a pan with oil
Add in onion and tomato
Add in salt
Toss well till they transparent
Add in ginger garlic pieces
Toss well till they mushy
Keep stirring, noted not to burn
Now it's done, keep aside to cool completely
Take them in a blender
Add some cashew
Make it a fine paste, keep aside
Heat a pan with oil, add in fennel seeds
Add in cinnamon sticks
Add in chopped onion
Saute it well till they transparent
Add in masala paste
Mix it well
Add in spices powder
Mix it well
Add in peas
Add in prepared cauliflower
Mix it well for 2 mins
Add some water
Give it a mix and cook for 10 to 15 mins
Now the veggies are cooked well 
Add in kasuri methi 
Give it a mix and cook for another 5 mins
Add in chopped coriander leaves
Now the gravy is done
Transfer them in a serving bowl
Serve hot
Enjoy with chapathi..
