Carrot Thoran / Kerala Style Carrot Thoran


Carrot Thoran is a tasty and delicious kerala style vegetable preparation which goes well with tamarind based kuzhmbu and with white rice.. Carrot is a healthy vegetable which rich in vitamins and fiber.. So you should added more carrot dishes in your daily meals.. 


Most of the common dish in kerala is prepared with fresh coconut and coconut oil, which enhance the flavor of taste and aroma.. It is as same as Beetroot Thoran which I have already posted in my blog..

INGREDIENTS :

Carrot - 2 (large, grated)
Salt - as needed
Water - 1/2 cup

TO GRIND :

Coconut - 1/4 cup
Dry red chilli - 2 nos
Cumin seed - 1/2 tspn
Garlic - 1 

TO TEMPER :

Coconut oil - 1 tbspn
Mustard seeds - 1/2 tspn
Urad dal - 1/2 tspn
Onion - 1 (chopped)
Curry leaves - few

METHOD :

  • First make the masala, given in "TO GRIND" into a coarse paste without adding water..
  • Grated the carrot or chopped into small pieces..
  • Heat a pan with oil, add in mustard and urad dal, allow to splutter..
  • Add in onion, curry leaves and toss well till transparent..
  • Add in carrot and stir well for 5 mins..
  • Now add in salt and water and cover the lid, cook it for 5 to 7 mins..
  • Add in ground masala and stir well.
  • Saute a couple of mins, Transfer them in a bowl..
  • Serve hot and enjoy...


PICTORIAL :

Take all your ingredients
In a bowl take grind ingredients
Take them in blender
Make them in coarse paste
Heat a pan with oil
Add in mustard and urad dal
Add in chopped onions and curry leaves
Toss till transparent
Add in carrot
Toss well along with onions
Add some water
Add in some salt
Cover it with lid and cook for 5 to 7 mins
Now it's done
When the water completely evaporate
Add in ground masala
Toss well till they combained
Just for 2 mins
Now it's done
Transfer them into serving bowl
Enjoy..
