Pineapple Vanilla Cake / Vanilla Cake with Pineapple Flavour Icing


I love making cake with whipping cream frosting, because they are so much fun and result looks beautiful.. This is lovely looking cake which I made for my client, Who gave me a order to impress his father.. I totally loved it and the design which I made is quite simple and easy, so every can try it out...


My client ask me prepare pineapple flavour cake but no need to add essence (to avoid smell of the essence), so I go for this recipe... Here I use plain vanilla essence for the base cake and I mix little pineapple crush for the frosting and ended with some white chocolate pieces.. It comes out very soft, moist, it really holded it shape well when frosting and result was happy from my client...

INGREDIENTS :

All purpose flour / Maida - 2 cups / 240 grams
Sugar - 2 cups / 400 grams
Butter - 100 grams
Eggs - 4
Vanilla essence or pineapple essence - 1 tspn
Baking Powder - 2 tspn
Salt - a pinch

FOR ICING :

Fresh cream / Whipping Cream - 2 cups
Sugar syrup - 1 cup (1 cup of sugar + 1 cup of water)
Pineapple crush - 1/4 cup
Cherry - 1 nos
White chocolate - 1 cup (grated)

METHOD :

  • Preheat the oven to 180 Degree C..
  • Prepare your baking pan with parchment paper and butter..keep aside..
  • In a bowl, take flour, salt, baking powder and mix well, keep aside.
  • In a mixing bowl, add in eggs, sugar and beat well with electric beater till the sugar dissolves..
  • Now add in butter and whip it again till they became fluffy and smooth..
  • Now add in vanilla, and flour mixture and fold it gently...
  • Pour this over the prepare baking pan..
  • Bake it for 30 mins, till they done..
  • Remove it from the pan and let's cool completely..
  • Slice them into two half and keepaside..
  • Prepare your whipping cream and keep aside..
  • Make the sugar syrup and keepaside to cool..
  • Now place a slices of cake in cake board and brush it with sugar syrup..
  • Spoon some cream and spread it evenly..
  • Then place another cake slice and brush some sugar syrup and spread some cream over the cake..
  • Now in a bowl, take some cream and add in pineapple crush and mix well.
  • Take this in a piping bag and cut the tip to make small hole..
  • Pipe the cake as you like.. and the sides too..
  • For extra taste I sprinkle some grated chocolate in the sides of the cake..
  • Top the cake with cherry and chill it for 2 hours..
  • Serve cool and enjoy...


PICTORIAL :


Take all your ingredients
Prepare your baking Pan
 Take flour in a bowl
 Add in baking Powder and salt
Mix it well, keep aside
In a mixing bowl add in sugar
Add in broken eggs
Add in butter, and beat till they became fluffy

It will take 4 mins 
Now it's done
Add in vanilla or pineapple essence
Again beat it well
Add in flour mixture
Fold it gently
Pour over the prepared pan
Flatten it evenly
Bake till thay done
Remove it from the pan and let they cool completely
Now slice them into two half
Prepare your whipping cream
Place the cake on the board
Brush it with sugar syrup
Spoon some cream
Spread it evenly
Place another layer of cake and brush some syrup
Spoon some cream and spread it
Cover it with cream
Take some cream
Add in pineapple crush and add some food colour (optional)
Give it a mix 
Take prepared in piping cream and cut the tip
Decorate like, or as your wish

Top it with cherry 
At the bottom too
Cut the tip into little big
Pip the side with rolls shape
Pipe the sides too 
Now the cake done
Decorate with grated white chocolate in the sides
Now it's done
