Peanut Rice / Verkadalai Sadam



One day I was in lazy mood to prepare lunch, so I plan to prepare this rice recipe.. A day before yesterday I this rice while browsing from sharmis passion, Keep this recipe in mind, to prepare this rice when I lazy to cook.. Peanut rice is a delicious rice recipe packed with roasted peanut and freshly ground spices powder..


You can even make this peanut powder in advance and store it fridge for 1 week..This recipe is one such quick simple meal that needs very few ingredients, but it turns out preety good and serve with papadam and vadams..

INGREDIENTS :

Cooked rice / Leftover rice - 1 cup
Gingelly oil - 1 tbspn
Mustrad seeds - 1/2 tspn
Urad dal -  1/2 tspn
Peanut - 3 tbspn (roasted)
Curry leaves - few
Salt - as needed

TO ROAST AND GRIND :

Coconut - 1/4 cup (grated)
Peanut - 1/4 cup (roasted)
White sesame seeds - 1 tbspn
Urad dal - 1 tspn
Dry chilli - 5 nos
Gingelly oil - 1 tspn

METHOD :

  • Roast all the ingredients except rice and salt, till golden or nice aroma comes..
  • Cool down and transfer them into a mixer and make it a coarse powder..
  • Heat pan with some oil, add in mustard and urad dal allow to splutter..
  • Add in peanut and curry leaves, toss well for a min..
  • Take cooked rice in a mixing bowl..
  • Add in tempering items, peanut powder and salt..
  • Mix well till they combained.. cheack for salt..
  • Transfer them to a serving bowl..
  • Enjoy..


PICTORIAL : 


 Take all the ingredients for roast and grind
 Take oil in a pan
 Add in coconut
 Roasted for 2 mins, till aroma comes 
 Now they are roasted
 Add in chilli, peanut, sesame seeds
 Roast it for 2 mins
 Now they are done, let it cool completely
 Take them to a blender
 Make it a powder
 Remove them to a plate
 Heat a pan with oil, add in mustard and urad dal
 When they splutter
 Add in peanut and curry leaves
 Toss it well in oil
Till they are done, keep aside
Take cooked rice in a wide pan
 Pour the tempering items 
 Prepared peanut powder
 Mix it evenly
 Transfer them to a serving bowl
 Enjoy...
