Aviyal For Adai / How To Make Avial


Aviyal with adai is very popular dish in India especially in South India.. This is one of the traditional recipe among the people in south India.. The adai is thicker than the popular dosai and little thinner than the uttappam.. Avial is nothing but a mixed vegetable curry which is cooked in fresh coconut masala  with a flavor of coconut oil...


The curry turned out very tasty and flavourful one, we all enjoy the combination of adai aviyal.. I have already post my aviyal recipe without curd but this is totally differ from the taste... The flavour of the coconut oil using while cook the vegetables make very aromatic and keep the veggies in same colour.. (it will not allow to change the colour of the aviyal)

INGREDIENTS :

Mixed vegetables - 2 cups (chopped like strips)
Curd / Yogurt - 1 cup
Salt - as needed
Coconut oil - 1 tspn
Water - 1 cup

FOR MASALA :

Fresh coconut - 1 cup (grated)
Green chilli - 6 nos
Gralic - 1 fat clove
Shallots / Small onion - 5 to 6 nos
Rice flour - 1 tspn

TO TEMPER :

Coconut oil - 1 tbspn
Mustard seed - 1 tspn
Curry leaves - few

METHOD :

  • Vegetables 2 cups (I use carrot, drumstick, brinjal, snackgourd, raw banana, beans, Potato, broad beans) cut them into long strips..
  • Wash well and tarnsfer them to a wide pan and some water, spoon of coconut oil and cover the lid and cook till they boil..
  • Open the lid and mix well with ladle and add in salt and mix well.
  • Then inbetween gap take masala ingredients in a blender..
  • Make it a smooth paste by adding water..
  • When the veggies are cooked, add the masala to the pan..
  • Give a good mix and cook till the raw smell leaves..
  • Simmer this for 5 mins till the veggies are done... 
  • Now off the stove and add in curd and mix it immediately.. Keepaside..
  • Now heat another pan with coconut oil, add in mustard and allow to crackle..
  • Then add in curry leaves and mix well pour it over the aviyal.
  • Mix well and check for salt..
  • Transfer them to a bowl..
  • Serve with adai, Enjoy..

PICTORIAL :

Take all your veggies and cut them 
Take your masala ingredients
Take all the veggies in a wide pan
Add some water
Add a spoon of coconut oil
Mix it well and cover it to cook
When they bring to boil
Give it a mix
Cook till the veggies are done
Add in salt
Now take masala ingredients in a blender
Make it a smooth paste by adding water
Now the veggies are cooked
Pour the masala over it
Mix it well
Cook till the raw smells leaves
Give a mix and check for salt
Off the stove and add in curd, mix quickly
Heat a pan with oil, add in musrard
When it sizzle
Add in curry leaves
Toss well, off the flame
Pour over the aviyal
Mix well and serve
Transfer them in a bowl
Serve with adai
Enjoy..
