Kasi Halwa / Poosanikai Halwa


Kasi Halwa / Poosanikai Halwa is a famous, delicious famous halwa made with white pumpkin... It is also a traditional dessert served in Brahmin marriages and also during Diwali or any other special occasions... I tasted this halwa in one of the marriage last month, the colour attracted me to prepared this halwa in this Diwali celebrations....


I prepared this halwa by chopped the white pumpkin into tiny pieces but you can grated it too... I made it in yellow colour, but some one prepared in red colour.. I prepared this halwa for my friend who come yesterday, (she enjoyed) it comes out very well and the result was so amazing.. It is easy to prepare, anyone can make it easy without fear...

INGREDIENTS :

Ash Gourd / Poosanikai - 1 cup (chopped finely)
Sugar - 1/2 cup
Ghee - 2 tbspn
Cashew - 2 (chopped)
Cardamom powder - 1/4 tspn
Yellow food colour - a drop
Saffron - few

METHOD :

  • Cut the ash gourd and peel the skin and remove the soft part and seeds..
  • Cut them into tiny pieces.. Keep aside..
  • Heat a pan with a tbspn of ghee and roasted the cashew till light brown and remove it to a plate..
  • In the same pan add chopped ash gourd and roast it for 2 mins..
  • And then add in water and cook it low flame by covering a kadai with a lid..
  • The vegetable should cook well and till the raw smell leaves..
  • When it cooked and the water is absorbed, add saffron and mix well.
  • Then add in sugar and a pinch yellow food colour and mix well.
  • When the mixture is goey and thicken.. Add in cardamom powder and mix well.
  • It started to leave sthe pan, at that time add a tbspn of ghee..
  • Mix well, and add in fried cashew and combained it..
  • Now it's done... Transfer them to a serving bowl..
  • Enjoy...


PICTORIAL :


Take all your ingredients
Heat a pan with ghee
Add in chopped cashew
Fry till golden
Remove them to a bowl
In the same pan add chopped pumpkin
Toss well in ghee for 2 mins
Now it's done
Add in water
Cook it well 
Cover it with lid and cook
Now the water absorbed
Add in saffron
Add in sugar
A pinch of yellow food colour
Add in cardamom powder
Bring to boil
The mixture became thicken
Add in 1 tbspn of ghee
Mix it well
Add in fried cashew
Combained it well
  Transfer them to a serving bowl
 Serve 
 Enjoy...
