Simple Spicy Potato Fry / Aloo Fry


Simple spicy potato fry is quick and easy to make and goes well with briyani or pulao or verieties rice or rasam rice or sambar rice.. Here I used quite few ingredients to prepare this simple potato fry.. My kids is a great fan of this potato fry they offer me to prepare the simple potato fry as the sidedish for curd rice in their school lunch box..



Here I use very less oil to fry this potatoes by just boil the chopped potato with water in sauce pan, drain it and I roast it in oil, so they not stick to the pan.. (easily cooked). And the main thing is roast the potatoes in medium flame, so they became crisp at outside and soft texture inside...  I served this with Soya Chunks Vegetable Briyani which I have already posted in my blog..

INGREDIENTS :

Potato - 2 (large)
Onion - 1 (sliced)
Turmeric powder - 1/2 tspn
Chilli powder - 1 tspn
Salt - as needed
Oil - 1 tbspn

METHOD :

  • Take your potato, peel the skin and cubed..
  • In a sauce pan add in cubed potatoes and water, allow to boil (not to cooked)
  • Drain it a sieve and keep aside..
  • Heat a pan with oil add in onion, toss till transparent..
  • Add in potato and cook it in low flame..
  • Inbetween add in turmeric powder and salt.
  • Toss well and cook the potato turn soft (it will take 10 to 15 mins)
  • Once they are cooked add in chilli powder..
  • Stir fry in medium flame, it will turns they attain golden crisp exterior..
  • Serve hot and enjoy..

PICTORIAL :


Take the potatoes
Peel the skin
Chopped it into small square pieces, wash well
Take them in a sauce pan and add some water
Bring to boil, but sure not to cook completely
Drain it 
Take your ingredients
Heat a pan with oil
Add in onions
Toss till transparent
Add in potatoes, mix well
Add in salt and turmeric powder
Mix well and cook it medium flame
Keep stirring till they cooked
Once it cooked
Add in chilli powder
Mix well and cook till the raw smell leaves
Now it's done
Transfer it to a bowl
Serve with briyani, pulao
