Badam Kheer / Almond Kheer


Badam Kheer / Almond Kheer is a creamy indian kheer recipe that tastes heaven it is thicker than the Badam milk or a Badam paal.. This kheer tastes great when it is prepared with smoothly grounded almond.. Vermicelli or Sago can also be used in this kheer which adds volume to the kheer but the taste be slightly be different..


This badam kheer recipe yields a thick and creamy payasam which can be served after meals dessert or dessert after a party meal..It can be served warm or chilled.. Here iam using fresh milk and sugar but you can use condensed milk instead of fresh milk...

INGREDIENTS :

Badam / Almond - 15 nos
Milk - 1 1/2 cups
Sugar - 3 tbspn
Saffron - 2 strands
Cardamom powder - 1/2 tspn
Warm water - 1/2 cup (to soak badam)

METHOD :

  • Soak badam in hot water for 15 to 20 mins..
  • Now press the badam to peel the skin, 
  • Grind the badam with a 2 tspn of milk into a smooth paste.. set aside..
  • Add saffron in warm milk ad keep aside.
  • Boil milk in wide bottom pan and add in sugar..
  • Simmer it for 5 mins so this milk became slightly thicker..
  • Now add in cardamom powder and badam mixture..
  • Stir continously, so the mixture became thick..
  • Now add in saffron mix and mix well.
  • Give a quick stir and switch off..
  • Transfer them to a serving bowl..
  • Top it with chopped almond, serve hot or cold.
  • Enjoy..

PICTORIAL :



Take all the ingredients
Take badam in a bowl
Add some hot water
Soak it for 20 mins
Peel the skin
Add them to  ablender
Add 2 tspn of milk
Make it a paste
In warm milk add saffron 
Soak it, keep aside
Add milk in a sauce pan
Allow to boil, simmer for 5 mins
Add in sugar
Now add in cardamom powder
Stir it continiously
Add in badam mixture
It slowly became thick
Add in saffron milk
Give a quick stir
Now it's done
Top it wth chopped almond
Serve warm or hot
