Mexican Burger With Sweet corn & Mayonnaise


Mexican Burger is filled with homemade mayonnaise, cabbage leaves, corn poato patty, slice of tomato and cover it with soft salted puffs buns.. It is yummy if you can see fresh napa (chinese) cabbage leaves.. if you are not a fan of that you swap in freshly parsley leaves..




Usually kids like burger so you can fill that with any vegetable patty which is healthy to your kids... That i mean, i know, a lot to say in one sentence.. But still completely awesome..

INGREDIENTS :

Burger buns - 8 nos
Butter - to roast
Tomato - 2 nos (slices into round)
Homemade mayonnaise - 1 cup
Fresh napa cabbage leaves - 4 to 5 (chopped)

FOR PATTY :

Boiled potato - 2 small (peel and mash)
Sweet corn - 1/2 cup +1/2 cup
Onion - 1 (chopped finely)
Bread crumbs - 1/2 cup
Chilli powder - 1 tspn
Pepper powder - 1 tspn
Cumin powder - 1/2 tspn
Coriander leaves - few (chopped)
Salt - as needed
Butter - 1 tbspn + frying patty

METHOD :

  • Prepare all the above ingredients ready..
  • Prepare your homemade mayo or store brought one..
  • Chopped the cabbage leaves and keep aside.
  • Slice the tomato into round slices...



  • In a microwave safe bowl add 1/2 cup of corn kernels and cook it for 1 min..
  • Then remove it to a blender and make it a coarse paste... keep aside..



  • Heat a pan with some butter and add in onion, toss till transparent..
  • Add in 1/2 cup of corn kernels and toss along with the onions for 2 mins. keep aside..



FOR PATTIES :

  • In a bowl add in boiled potatoes and mash it with the back of  the spoon or fork..
  • Then add in cooked corn and onion mixture, coriander leaves, chilli powder, cumin powder, pepper powder, salt, bread crumbs..
  • Atlast add in coarse paste of corn kernels and mix well till they are combained..
  • Now take small amount of mixture and roll it into ball.
  • Flatten it into flat round patties.. prepare all the dough like that... keep aside.

  • Heat tawa and grease with some butter..
  • Place the patties on the heated tawa and cook in medium flame..
  • Till they golden brown in colour on both sides..Keep aside..



HOW TO ARRANGE PATTIES :

  • Now take burger buns and cut horizantally two half..
  • Toss lightly on the tawa with some butter..
  • Place the lower part of the bun in a plate and apply some mayo, spread it over..
  • Add some chopped cabbage leaves..
  • Place the prepared corn patty, slice of tomato and spoon some mayo above this..
  • You can add slice of onion if you wish.. Then cover it with another half of the bun..
  • Now the delicious burger is ready to have..
  • Enjoy..



PICTORIAL :



Take all the ingredients
Take 1/2 cup of corn in a microwave safe bowl
Pop it in a microwave for 1 min
Now it's done, let cool completely
Remove it to a blender
Make it a coarse paste, keep aside
Heat a pan with some butter
Add chopped onions
Toss till transparent
Now add in corn kernels
Cook it for 2 mins, keep aside
Take boiled potato in a bowl
Mash it with fork
Add cooked corn and onion
Add in chopped coriander leaves
Add in chilli powder
Add in cumin powder
Add in pepper powder
Adfd in salt
Add in bread crumbs
Add in coarse corn paste
Mix well
Make them into a patties
Heat a pan with some butter
Add your patties
Toss well on both sides
Till light brown
Take your burger buns
Cut them into half
Toss lightly on the tawa with some butter
Remove it to a board
Apply some mayo
Chopped cabbage leaves
Add your patty
Place a slice of tomato
Again spoon some mayo
Cover it with another bun
Press it lightly
Now it's done
Yumm yumm yummy
