Keema Paratha / Mutton With Cheese Stuffed Paratha


Mutton keema paratha is a hit in my house.. My kids just love this type of parathas.. It is nothing but the, parathas are stuffed with mutton keema.. Adding cheese is an optional one, if you don't like to have cheese on it just skip away.. But kids like to have cheese inbetween the parathas, while having in each and every bite... 


The stuffed keema parathas is pretty simple easy to make.. You can have it without any sidedish with it.. You prefer to have ghee or butter or oil while toasting the parathas.. Pack this in the tiffin box for kids to find it finished when they return back home... 




Adding milk to the dough turns out the parathas so soft and fluffy.. You can stuffed it with chicken keema masala instead of mutton keema.. soo i post that recipe also... This is a perfect recipe to try out during Ramzan...

Resting time : 15 mins
Cooking time : 5 to 7 mins for each parathas..

INGREDIENTS :

FOR STUFFING :

Mutton keema masala - as needed
Coriander leaves - few (chopped)
Cheese - 1 cup (grated)
oil - 1 tbspn
Ghee - for toasting parathas

FOR DOUGH :

Wheat flour - 2 cup
Ghee - 2 tbspn
Oil - 2 tbspn
Milk - as needed
Salt - as needed 

METHOD :

  • Take your leftover mutton gravy (i use my spicy punjabi mutton curry), you can keema mutton curry..
  • Heat a tawa with some oil, once it smoke, add the mutton gravy..
  • Now take the dosa filpper or you can use tumbler and turns it upside down..
  • Do the pounding with rhyming sound.. untill every thing blends well and mutton chopped into tiny pieces...
  • When it became semi dry mixture add chopped fresh coriander leaves..
  • Give it a mix and transfer the prepared keema to a plate and keep aside..
  • For the dough add wheat flour, oil, ghee, salt  in a wide bowl.
  • Then lightly rub the flour with your hands..
  • Now add in milk to make a soft and smooth dough..
  • Let it rest for 15 to 20 mins.. 
  • Make the dough into small balls and take a one portion of dough and roll it into chapathi.. Keep aside..
  • Then take another ball of dough and roll it into chapathi..
  • Add some mutton mixture and spread evenly, add chopped coriander leaves, and grated some cheese on the top..
  • Now take another chapathi and place over it..
  • Now press it with your hands and fold the edges..
  • Heat a tawa with oil /ghee and place the prepared parathas on the tawa..
  • Once it done flip it and press it with ladle and apply oil or ghee.
  • Toast well on both side till it's done.. 
  • Do it in medium flame so it can fluff well..
  • When it done remove it to a cutting board.
  • Cut them into four pieces..
  • serve hot and enjoy with raita..


PICTORIAL :


Take your leftover mutton curry (punjabi mutton curry)
Heat a tawa with some oil
Add your mutton gravy
Now pounding it with ladle
Now the mutton is finelly chopped into small pieces
Leave the gravy became little thick
Now almost done
Finally add some chopped coriander leaves
Mix evenly
Transfer them to a plate and keep aside
Take wheat flour in a wide pan
Add some oil
Little ghee
Some salt and rub it with your hands
Now add some milk
Knead well
To form a soft and smooth dough
Leave it for 15 mins
Make them into small ball
Take one ball of dough and flatten them into chapathi shape
Place some mutton curry
Add some chopped coriander leaves
Grated some cheese on the top
If needed (it is optional)
Cover it with another chapathi
Press it lightly
Fold the edges
Place it on the heat tawa
Flip over it and add oil or ghee
Press it lightly with ladle
Again flip it over and add oil
See how fluffy it is...
Now transfre to a cutting board
Take pizza cutter
Cut it into half
Cut them carefully
 
Cut them into triangles
Serve with raita
Serve hot
Cheesy.. enjoy...
