Nei Appam Karthigai Deepam Special Recipe


This is the first time I am trying this Nei appam / Nayyappam... Mom always used to make appam with wheat flour and banana... its a deep fried one.. This recipe for nei appam with only rice, jaggery and coconut. Thought this would be helpful for many of you as karthigai deepam festival recipes... I have beautiful memories about karthigai deepam.. It is the most beautiful festivals according to me those days.. Two eyes wont be enough to see all the lamp lit all over.


Mom had a lot collections of lamps with her.. Few pithalai vilaku of differnt shapes, few special lamps made out of "maa-kall" and a lot other clay lamps.. Every year i buy one new lamps to add in my collections... I and my sister always save few crackers, flowers pots an sparkles that dad buys for Diwali and light it on the day of karthigai.. One suprise for you, is my lovely sister's Birthday is on karthigai deepam... 


We celebrate her birthday on this karthigai deepam in every year.. So we will be excited... Now to the recipe, i got an idea about the recipe, i got an idea about form Shanthi's Thaligai cook book. But adapted the recipe to suit my taste...

Preparation time : 3 hours soak time..

INGREDIENTS :

Raw rice - 1 cup
Crushed jaggery - 1 1/2 cup
Coconut grated - 4tbspn
Cooking Soda - 3 piches
Salt - 1/8 tsp
Ghee - as needed

METHOD :

  • Soak rice for 3 hours.. Grind it with less water to a thick paste..
  • Melt the jaggery with very little and strain to remove any impurities.. 
  • Add it to the ground rice batter and mix well.. keep aside..
  • At that time of preparing, add cooking soda, salt, powdered elachi, coconut and mix well.
  • Heat a paniyaram pan with little oil or ghee.. 
  • Pour the mixed batter to fill each one..
  • Cook for 1 - 2 mins in low flameTurn with the paniyaram skewer or a spoon and add more ghee if dry..
  • Cook for another mintute or two in medium flame untill golden brown an inside of the paniyaram gets cooked..
  • Collect the paniyaram in the serving bowl..
  • Enjoy...


PICTORIAL :


Take a cup of raw rice 
Take them in a bowl
Soak it for 3 hours
Take all the ingredeints
  In a pan add jaggery
 Little bit of water
 Allow to melts
 Now it's done
Strain it
Take soaked raw rice in a blender
Make it a paste
Transfer it to a bowl
Add in elachi powder
Little bit of salt
Cooking soda
Pour the jaggery water
Mix well
Add in fresh coconut
Heat a pan with little oil or ghee
Fill it with batter
Cook for 1 or 2 mins then flip it
Again flip it for 2 mins till it completely cooked
Collect all paniyaram in a serving plate
Now serve to god
