Semiya Briyani / Vemicelli Briyani


Semiya Briyani / Vemicelli Briyani is a great one pot meals for lunch... I have tasted semiya briyani in most famous hotel in tiruneliveli... This is one of the most loved dish for my family for it's simplicity and taste... I remeber eating quite a large portion than i usually eat... After that i never got a chance to taste it.. Lastweek when i was in my naighbours place, she ask me about the semiya briyani..



So got the recipe and make it immediately and posted it for you...This is the first time iam trying the recipe of semiya / vemicelli briyani... usually i make the same rice varirties for kids lunch box and i tried this semiya briyani for Raks kitchen... This is a satisfying dinner, sure a welcome change to the boaring usual dinner menu..

Cooking time : 20 mins

INGREDIENTS :

Ghee - 2 tbspn
oil - 1 tbspn
Cinnamon stick - 1
Onion - 1 big (chopped)
Tomato - 1 big (chopped)
Capsicum - 1/2 (chopped)
Carrot - 1 (chopped)
Beans - 8 (chopped)
Ginger garlic paste - 1 tspn
Chilli powder - 1 tspn
Coriander powder - 1/2 tspn
Garam masala powder - 1/2 tspn
Coriander and mint leaves - few (chopped)
Salt - as needed

TO COOK SEMIYA :

Vermicelli / Semiya - 1 cup
Water - 2 cups
Salt - 1 tspn
Coconut oil - 2 tbspn

METHOD :

  • In a sauce pan heat 2 cups of water and let it to boil.
  • Now add in vermicelli and allow to boil..
  • Then add in salt and coconut oil..
  • Now it should be taken exactly 4 mins..
  • Drain the water and let it cool , add little oil and fluff it..
  • It should be nicely seperated, set aside..
  • Heat a pan with ghee, oil and add in cinnamon sticks..
  • Then add in chopped onions and fry it till ransparent..
  • Now add in ginger garlic paste and mix well.
  • Add in chopped tomatoes and salt, saute it for 2 mins..
  • Then add in chilli powder, coriander powder and garam masala powder and toss well.
  • Once the masala are blended, add the veggies and saute it for few mins..
  • Cook till the veggies are tender yet crunchy to taste..
  • Now add in cooked vermicelli and toss it for 3 mins..
  • Finally finished with chopped coriander and mint leaves..
  • Serve hot with onion raita..
  • Enjoy...


PICTORIAL :


Now take 1 cup of vermicelli / semiya
Heat water in a sauce pan
Allow to boil
Add in vermicelli
Keep checking it.
Add some salt
Then some coconut oil
Cook it for 4 mins..
Drain the water
Let it be cool completely
Add some oil and fluff it, keep aside.
Prepare your veggies ready
Heat a pan with oil
Add some ghee
Add in cinnamon sticks
Then chopped onion
Toss till transparent
Now add in ginger garlic paste
Saute it for 2 mins
Add in chopped tomatoes
Toss well
Add in spices powders
Keep mixing
Add in little bit of salt
Once the masala blends
Add all the chopped veggies
Allow to cook the veggies
  Around 5 to 7 mins.

When it became this consistency
Add in cooked vermicelli
Fluff it lightly 
Add in chopped coriander and mint leaves
Now it's done
Transfer it to a plate
Serve with raita
