Pudalangai Poriyal / Snakeguard Poriyal


Pudalangai poriyal / snacke gourd poriyal is one of my son's lovely vegetable... we mix this poriyal with white rice and sambar rice.. Yesterday we had a friend at home for lunch.. So i made little more than usual.. I made sambar, rasam, cabbage poriyal, masala vadai along with this...


Snack guard needs some preparation before cooking, which i always enjoy doing... Some veggies needs more work to be done when compared to the others, But i always love doing those special preparation part, and enjoy cooking that veggie.. First peel off the skin and slice them and cut them into small pieces...

INGREDIENTS :

Pudalangai / Snake guard - 300 - 350 grams
Turmeric powder - 1/2 tspn
Grated coconut - 1/2 cup
Salt - as needed

FOR SEASONING :

Coconut oil - 1 1/2 tspn

Mustard seeds - 1 tspn
Urad dal - 1 tspn
Small onions / shallots - 4 (finely chopped)

FOR MASALA :


Red chilli - 4 nos

Garlic - 1 cloves
Cumin seeds - 1/4 tspn

METHOD :



  • Grind the grinding items into paste.
  • Whip the snakeguard well with the kitchen towel and trim both ends, peel the skin and cut it into 1/2 inch thickness..
  • In kadai add oil, mustard, urad dal, chopped small onion. Toss it for a min..
  • Add in chopped snakeguard and mix for a min...
  • Add in some turmeric powder and toss lightly... 
  • Fry them for 6 to 7 mins untill they cooked, and add in salt and give a mix...
  • Now add in grinded masala, and toss well..
  • In a low flame or till the raw smell is gone..
  • Now add fresh grated coconut and toss them. 
  • It's ready to serve..

PICTORIAL :

Take the snake guard
Cut them into small pieces
Take the masala ingredients
Add to the blender
Make them into paste
Heat a pan with oil add in mustard, urad dal
Add in shallots
Add in chopped snake guard and turmeric powder
Toss well in the oil
Pour some water 
Allow to cook well
Add some masala paste
Add some salt
Toss well till the raw smell is gone
Add in coconut
Toss well
Mix well in a low flame 
Now it's ready to serve
Serve hot
