Paneer Fried Rice


Paneer fried rice is my son favourite... He loves both paneer and fried rice so paneer fried rice is abviously his favorite too. Hubby can have fried rice even daily.. Yes he is crazy about fried rice abd his stable order in restaurants will egg fried rice or veg fried rice.. I like it too but seeing the amount of oil they use in resturants and while eating with hands you can feel the oil so I feel really guity to eat fried rice at restaurants..

INGREDIENTS :

Basmati rice - 1 cup (cooked)
Paneer - 1/2 cup (cut it into small pieces)
Onion - 1 (finely chopped)
Carrot - 1 small (chopped)
Beans - 7 (chopped)
Green chilli - 3 (sliced)
Pepper powder - 1 tspn
Salt - as needed
Oil - 2 tbspn
Spring onions - (as needed)

METHOD :

  • Cut the paneer into very small cubes and toast it with a tspn of oil in a pan and drain it in tisse papper and set aside..
  • Cook Basmathi rice and keep aside. Let it cool down..
  • In the same pan add one more tspn of oil and toss onion and chilli.
  • Till transparent or brown and add in carrot and beans and toss along with the onion.
  • Sprinkle some salt and pepper powder and toss for 2 mins.
  • Then add in cooked basmathi rice and mix evenly..
  • Now add in roasted paneer cubes and mix well.
  • Keep the stove slow for 5 mins and turn off.
  • Mix well add some spring onions and toss well.
  • (But i didnt have them in my hands....)
  • Now it's done to serve with any veg gravy...

Prepare your veggies
Heat a pan with oil 
Add in paneer cubes
Toss well
Till it get brown in colour
Take them out from the kadai
In a same pan add in onions and chillies
Toss till brown
Add in carrot and beans
Add some salt
Sprinkle some pepper powder
Toss well
Add cooked basmati rice
Toss well
Now add in toasted paneer
Mix evenly
Serve hot
Enjoy.....
