Muslim Dum ka Mutton Briyani


Usually our sunday menu goes for pot meal... Muslim Dum briyani has been a regular visitor on our dinning table, this dish is very much enjoyed by my family and we simply love it... It taste is sooooo delicious... I cannot describe it better! and it is not only my opinion, but anyone else who ever had tasted this briyan atleast once would vouch for that... 


The style of cooking in north india is different from southern states... South india boasts of a wide variety of briyanis over any other part of the country... There are wide variety of briyani prepared in india like Hydrabadi briyani, chettinadu briyani, Mughai Briyani, Kashmiri briyani, Etc... list goes on...among this one is muslim dum briyani Recipe... The style of preparation and rice loads of exotis spices that blends together to give unique delicious and unforgettable taste...




I have post quite few briyani recipes in my blog. This is my second mutton briyani recipe the first one is Dindigul mutton briyani is tawa style, After that i wants to try dum briyani, and finally made it...It comes out yummy.So with no more delay, off you go to the recipe...




Preparation time : 30 mins
Cooking time : 1 hour 15 mins

INGREDIENTS :

Basmati rice - 4 cup
Onion - 2 (sliced)
Tomato - 2 (sliced)
Ginger garlic paste - 1 tbspn
Thick yogurt - 1 cup
Ghee - 2 tbspn
Coconut oil - 3 tbspn
Salt - as needed
Water - 5 1/2 cup
Mint, coriander leaves - few

FOR COOKING MUTTON :

Mutton - 1/2 kg
Dry chilli powder - 2 tspn
Turmeric powder - 1 tspn
Ginger garlic paste - 2 tbspn
Salt - 1 tspn
Water - 1/2 cup

FOR MASALA :

Dry chilli - 2 or 3
Green chilli - 2 
Cloves - 3 
Cinnamon sticks - 2
Fennel seeds - 1/4 tspn
Cardomom - 3
Shallots / small onions - 10
Mint leaves - a bunch

FOR TEMPER : 

Bay leaf - 3 to 4
Cloves - 4
Cinnamon strick - 2
Fennel seeds - 1 tspn

METHOD :

STEP -1

  • In a pressure cooker add mutton, ginger garlic paste, turmeric powder, salt, chilli powder and water, pressure cook it for 3 to 4 whistle..
  • Now seperate the cooked mutton out and transfer it into a plate..
  • Then grind the ingredients given in the " FOR MASALA" into fine paste..
  • Wash and soaked the rice for 15 mins..
  • Then sliced onion and tomatoes..


STEP - 2

  • Now it time to make briyani...
  • Heat a briyani pan with ghee and oil, add in tempered items goven in the " to temper"..
  • Then add in sliced onion and toss well.
  • When the onion became transparent add in sliced tomatoes..
  • Toss well.. then add in grinded masala paste, ginger garlic paste, yogurt, salt, cooked mutton, one by one..
  • Give a mix and let it cook for 7 mins.. Then add in 5 1/2 cup of water in and mix well..
  • Then leave to boil and now add in soaked rice and mix well...
  • Check the salt, and allow to boil..
  • Add in chopped coriander and mint leaves and mix well.
  • Cover it for 10 mins in medium flame..
  • After 10 mins open the lid and mix it well...
  • Now keep it in dum.. 


STEP - 3

  • For dum part, place a stone dosa tawa on the stove in low heat.. 
  • And now close the tawa with kitchen cloth and cover it with lid and place a weight over it...
  • (I used stone to weight it)..
  • Let it dum for 15 mins and off the stove keep it on the tawa for 10 mins...
  • After 10 mins open it and mix the rice gently...
  • Now the yummy muslim dum briyani is ready to serve with raita...

PICTORIAL :


Take mutton pieces
Wash well
Add it to the cooker
Ginger garlic paste
Turmeric powder and chilli powder
Little bit of salt
Add water 
Give a mix
Cover and whistled it for 4

Now it's done

Remove mutton to the plate

Keep the mutton stalk aside
Prepare all your veggies
Chopped mint and coriander leaves
Take your grinding masala
Add it to the blender
Then add some fresh mint leaves
Grind it into a paste
Add ghee and oil in a briyani pot
Take tempering items 
Add to the pan
Add sliced onions
Toss well till transparent
Now add in tomatoes
Then grinded paste
Cooked mutton
Mix well
Add in ginger garlic paste
Mix well 
Now add in mutton stalk 
Some thick yogurt
Salt
Allow to boil
Now add in soaked rice
Give a mix 
Check the salt and chilli
Now add in chopped coriander and mint leaves
Now cover it with lid, keep in low flame
When the rice is half cooked

Now flatten the rice

Again add some mint and coriander leaves
Cover it with lid and place the weight over the lid
Now the briyani is ready
Fluff it carefully
Serve with mutton varauval
Now it's done to serve
