Homemade Mutton Puffs


Delicious evening snacks with mutton filling which is most popular in kerala.. Puffs is one of keralite's favourite snacks enjoyed by every one... Puffs filled with spicy stuffing like egg, meat, vegetable have always been a favourite evening snacks.. Memory of having puffs date back to my early school days, where these were sold in school canteens during the breakfast break along with samosas... 



But to get hold of puffs, we had to reach the canteen as early as possible, as that was the only item that used get over in no time. Light and flaky puff pastry filled with spiced mutton is just mouth watering and must try one... I have been making these puffs for a couple of days and today i post this recipe, so that you can make it too.....

Preparation time : 15 mins
Baking time : 20 to 30 mins
Cooking time : 15 mins
Makes - 2 puffs

INGREDIENTS :

Homemade pastry sheets - 2

Egg - 1 (To brush it on the top)

FOR COOKED MUTTON :


Mutton - 100 grams

Ginger garlic paste - 1/4 tspn
Salt - 1/2 tspn
Water - 1/4 cup


FOR FILLING :


Oil - 1 tspn

Onion - 2 (chopped)
Tomato - 1 (chopped)
Chilli powder - 1 tspn
Garam masala powder - 1 tspn
Pepper powder - 1 tspn
Ginger garlic paste - 1 tspn
Salt - 1 tspn
Coriander leaves - few

METHOD :



  • Preheat the oven for 200 degree C.
  • Then in a pressure cooker add in mutton, ginger garlic paste, water and a pinch of salt and whistled  it for 3..
  • Heat a pan with oil, add in sliced onions toss well till it became brown in colour..
  • Now add in ginger garlic paste, and all the spices powder...
  • Then give a mix untill it became mushy.
  • Now  add in tomato and toss them.
  • The masala should blend with the onion...
  • Toss till the raw smell is gone..
  • Now add in cooked mutton, chopped coriander leaves to the masala.
  • Toss it well, then simmer the stove for 5 minsor till the gravy is thick...
  • let the filling should be cool down completely..
  • Trans fer it into a plate.

FOR MAKING PUFFS :


  • Now puffs pastry sheets which i have already prepared.
  • place a pastry sheet in between the plastric wrap and extand it lightly..
  • Then spoon the mutton filling in the centre of the sheet.
  • And fold the one side end towords the another like triangle shape..
  • Place it on the baking tray to bake.
  • Then beaten a egg in a bowl and brush it on the top of the puffs.
  • Then bake it for 20 to 30 mins.. or till it done.
  • Serve hot and enjoy...

PICTORIAL :




Prepare your pastry sheet
Take your ingredients for filling
Add mutton to the cooker
Add in ginger garlic paste
Some water
Few salt to taste
Whistled it for 3 then it cooked
In a kadai add in oil and onions
Ginger garlic paste
Toss it till brown
All whole spices powder
Add in tomatoes
Toss well
Add in mutton pieces
Toss well 
When the gravy became thick add in coriander leaves
Now the mutton filling is ready 
Transfer it into a bowl to cool completely
Place the pastry sheet in the platic wrap
Cover it with another wrap and extand it 
Spoon some fillings
Fold like this
Place it on the baking tray
Break the egg in a bowl
Beat lightly
Brush it on the top
Bake it
Serve in a plate
