Coconut Cookies


Coconut cookies is mostly loved by my hubby specially and the cookies which i bake doesn't have eggs in them...So i try to bake eggless stuff when i bake for her.My recently baked cookies are eggless too, You can check out all my cookies, Ghee cookies, Cashew pista cookies, Peanut snow cookies, Marbled cookies...


If you love a intense coconut flavour, Then this cookies is for you.... The fat used in this is coconut oil, Which gives a lovely nutty aroma to the cookies. This also had fresh coconut, so It taste so fresh. If you don't have fresh, you could use frizen or desiccated ones. Lots of coconut and sugar makes these cookies chewy and delicious.. 


Fresh homemade cookies are very crunchy and melted in your mouth. Try making coconut cookies today for your tea.. Both elders and kids love this treat...


Preparation time : 10 mins
Baking time : 15 mins
Serve : 12 to 15 cookies

INGREDIENTS :

All purpose flour / Maida - 120 grams
Coconut - 50 grams (Fresh of desiccated, I used fresh)
Sugar - 50 grams (powdered)
Coconut oil - 40 ml
Baking powder - 1/2 tspn
Vanilla essence - 1 tspn

METHOD :

  • Preheat the oven to 180 Degree C. Spray the baking tray with oil..
  • Take flour in a mixing bowl, add in baking powder and mix well.
  • Now take coconut oil, powdered sugar, vanilla in a another bowl and mix well.
  • Now add the coconut and mix well.
  • Add to the flour mix and make into a soft dough.
  • Divide into equal portions. and arrange in a baking tray..
  • Put it in preheated oven for 15 mins..
  • Remove it from oven and let it cool for 10 mins
  • Store it in a air tight container in fridge..


NOTES:

  • You can use normal oil instead of coconut oil...
  • You can use desiccated coconut too. 
  • If you use fresh like i did, you have to store it in fridge..


PICTORIAL :


Take all your ingredients
Take flour in a mixing bowl and 
add in baking powder 

 Mix well and keep aside
In another bowl add in oil
Powdered sugar
Some vanilla
Mix well
Fresh coconut
Mix well
Add coconut mix to the flour mixture
Mix well to form dough
Now it's ready 
Divide small portion
Into small Ball
Place it on the baking tray
Arrange it in a tray
All baked
See how it's puffs up
Serve....
