Andhra Tomato Mutton Curry



Spicy mutton curry in tomato gravy recipe is my hubby favourite recipe.. He always prefer this mutton curry for Mutton briyani... It is famous in andhra side and here in andhra cuisine is very disinict with it's usage of spices.. The selection of chilli also is a key to make the right recipe... The famous chilli has its hotness along with the colour..Here we sharing the andhra mutton curry that can be tried out with briyani, roti, parotta or any other rice derivative.. 




Here the chilli, cinnamon, fresh coconut, poppy seeds, cardomom is roasted along with a spoon of coconut oil.. Tomatoes, mutton and fried masala are come together to create a perfect dish.. Just basic but taste really yummy. I love these kind of dark colour mutton curries with a thin layer of oil floating on the top.. So yummy...

INGREDIENTS :

Tomatoes - 3(chopped)
Cilantro - few
Salt - 1 tbspn

FOR COOKED MUTTON :

Mutton - 1/2 kg (boneless)
Water - 1 cup
Salt - 1/2 tspn

FOR ROAST AND GRIND :

Chilli - 15 
Poppy seeds - 1 tbspn
Fennel seeds - 1 tbspn
Cinnamon sticks - 2 (big)
Cloves - 3
Cardomom - 3

METHOD :

  • First chopped the mutton into small pieces.
  • Wash well and add to the cooker and add little salt, water and whistled it for 3..
  • Now the mutton is ready, keep aside.
  • Then roast the masala ingredients in spoon of coconut oil and make it into fine paste..
  • Then heat a pan with coconut oil and add in ginger garlic paste and toss well.
  • Now add in chopped tomatoes, salt mix and cook it for 5 mins or till it mushy..
  • Then add in masala paste and cooked mutton.. 
  • Give a mix and allow to cook for 5 mins in low flame.
  • Now add in mutton stalk (mutton cooked water), now close the lid and cook it for 10 mins
  • When the oil floats on the top off the stove and add in cilantro..
  • Give a mix and the gravy is ready to serve...


PICTORIAL :


Take boneless mutton and wash it 
Cut it into small pieces
Add to the cooker
Add some water
Some salt
Close the lid and whistled it for 3
Now the mutton is ready
Take the masala items to roast
Add to the kadai
Add in coconut
A spoon of coconut oil
Roast well
Till it get brown

Add it to the blender

Grind it into fine paste
Heat a pan with coconut oil
Add in ginger garlic paste
Toss well in the oil
Add in tomatoes
Then salt

Cook till mushy
Now add in masala paste
Then cooked mutton
Mix well and leave it for 5 mins
Add in mutton stalk and mix well
Allow to boil 

Add in fresh cilantro
Cover and cook it for 10 to 15 mins in low flame
Open the lid and 
see the oil floats on the top the gravy
Give a mix and serve
Serve hot with briyani
