Traditional Mutton Bone Soup / South Indian Mutton Soup


Traditional Mutton Bone Soup / South indian mutton soup is very delicious, healthy one and my mom which she used to give me when was sick. Usually i love having this types of soups, It is very comfortable food when you are down with throat pain, cold or running nose. Another way that i relish this soup is just the liquid served warm before lunch..


Mutton soup is very common in the southern part of India. this soup is made by cooking mutton bones with flesh along with spices which is very aromatic and fragrant. The spice level is less and can be increased or decreased according to taste and preference.. We may also these types in the country chicken too.. My hubby and my daughter is fond of this souppppssss!!! 


Crushed shallots and garlic gives excellant aromatic flavour to the soup while we having... You are meat eater then you must give this a try and you will keep making it often... Hope you will give it a try and comments about the recipe...

Preparation time : 10 mins
Cooking time : 20 mins

INGREDIENTS :

Mutton - 300 (with bone)
Shallots / Small onions - 8 to 10 nos
Garlic - 1 or 2 cloves
Turmeric powder - 11 /2 tsp
Cumin powder - 1/2 tspn
Pepper powder - 1 tspn
Ginger paste - 1 tspn
Salt - to taste..
Curry leaves - few
Water - 2 cups 

METHOD :

  • First, in a blender add in shallots and garlic, grind it into coarse form..
  • Wash the mutton in running water and put in a pressure cooker..
  • Add in grind shallots garlic paste, a spoon of ginger paste, cumin powder, turmeric powder and mix well. 
  • Give a mix and add in 2 cups of water, salt , some pepper powder, and curry leaves..
  • And mix well and pressure cook it for 3 whistles and simmer for 10 mins. 
  • Till the mutton bone pieces are fully cooked....And sure we didn't add any oil but some oil float on the top of the soup...
  • Serve warm in a soup bowl.. 

PICTORIAL :



Take all your ingredients
In a blender add in shallots and garlic
Into coarse form
Add mutton to the cooker
Add shallots garlic paste
Add in ginger paste
Some cumin powder
Add in turmeric powder
Some water
Salt
Add in some pepper powder
Give a mix
Few curry leaves
Close the lid and whistle for 3 
Now it's done, see oil float on the top
(It's mutton own fat)
Serve hot

Eggless Apple Muffins



Apple muffins is a recipe which was in my mind foe quite a long time. Finally i made few days back and it was delicious.. It tasted so yummy and mouth watering... I saw this recipe from my friend Aarthi's website and my son ask me to prepare this muffins for his school friends... They really enjoy it well and gave me a great wishes about the muffins..




It is full of apple and cinnamon powder which gives excellant smell and taste to this muffins.. These are had the perfect crunchy top and moist and fluffy interior and kids loved it.. You may also use banana instead of apple. I share different muffins recipes will coming soon...Hope you will give it a try and comments about the recipe....






Preparation time : 10 mins
Baking time : 20 mins
Makes - 6 miffins

INGREDIENTS :

All purpose flour / Maida - 1 cup
Sugar - 1/2 cup
Baking soda - 1 tspn
Yougurt / 1/2 cup
Apple - 1 (medium size)
Oil - 1/4 cup
Cinnamon powder - 1/2 tspn
Salt - a pinch
Sugar - 1 tbspn

METHOD :

  • Preheat oven to 180 degree C.
  • Brush the muffins tray with oil..
  • Peel the apple and make apple puree...
  • Take flourin a mixing bowl, and add in sugar, cinnamon, baking powder, salt and mix well..
  • Then add in apple puree, oil, curd and fold them evenly..
  • Scoop the batter in the muffins tray.
  • Bake this for 18 to 20 mins or check wheather toothpick inserted comes out clean..
  • Remove from oven and let it cool before removing from the tray.
  • Tasted best when served warm...


PICTORIAL :


Take your ingredients
Take a apple
Peel and cut into half
Add to the blender 
Make it into a paste
Take flour in a mixing bowl
Add in cinnamon powder
Baking soda
Sprinkle some salt
Add in sugar
Mix well
Then add in apple puree
Some oil
Add in curd
Mix well
Mix evenly
Take a muffins tray
Brush it with some oil
Spoon the batter into the mould
Now it's baked
I spread some sugar
Serve warm

Homemade Puff Pastry Sheets / Pastry Sheets For Puffs


You need puffs sheets to make puff pastries, Puff biscuts etc... Usually you do not find puff sheets for sale in the market in india... So you have to make them at home, however with the right approach, it is actually quite easy to make puff pastry and better off buying ready- made puff pastry sheets in the freezer section of your nearby stores... 



When my son ask me to make puffs.... Iam so badly wanted to try at home, but without puff pastry sheets how can i prepare puffs, I was too scared to make my own puffs pastry sheets, because i thought it is so hard to make, but it is so easy when i search at my friend website, so i got the confidence to give this a try...It comes out very well and it is light, flaky, ready to bake, pastry that's fast, easy to use and delicious...



Now i make my very own sheets to make my very own puffs. Now for you all who cannot get this lovely sheets, Why not try your hands on them... It is better than store bought. So give it a try and let me know it turned out....

Preparation time : 4 to 5 hours
Makes - 15 to 20 puffs
Recipe Category - Basic

INGREDIENTS :

All purpose flour / Maida - 300 grams
Butter - 300 grams (200 + 100 grams cubes)
Powdered sugar - 1 tspn
Cold water - 200 ml 
Salt - 2 tbspn

METHOD :

FOR DOUGH :

  • For the pastry sheets first make the dough... Take flour in large bowl. 
  • Add in salt, powdered sugar and mix well.
  • Now add in 100 grams of butter cubes and crumble with your hands... 
  • Now add in ice cold water slowly and make into a soft dough... 
  • Shape the dough into rectangular and cocer it with plastic wrap..
  • Place it on the fridge for 30 mins...

TO MAKE PASTRY SHEETS :

  • Now take 200 grams of cold butter and place it on the plastic wrap. 
  • Fold the wrap over the butter and bash the butter into a little thin rectangular...
  • Spread the plastic wrap and place the dough over it..
  • Cover it with another plastic wrap and roll it into thin sheet.. 
  • Now place the bash butter in the middlre of the dough and fold them from both ends.. 
  • Invert them and roll it again into thin rectangle. Fold them into both ends...
  • Cover this with plastic wrap and put them into fridge for 30 mins... 
  • (SEE THE IMSGE FOR UNDERSTANDING)
  • Now repeat then step 3 0r 4 times. So you are totally you are doing it for 8 times. 
  • Each time you have to put in the fridge for 30 mins..
  • Now take the dough out of fridge. Roll it into thin rectangular sheet. 
  • Cut it into square of your liking...Place the dough squares in fride for about 1 hours...
  • Now you can use it to make any puffs you like.

NOTES :

  1. Always keep the dough cold while making the entire process..
  2. Feel like the dough and butter is getting warm, put that in fridge till it gets firm and cold..
  3. Make sure the puffs sheet is cold before putting it in the oven.
  4. This will make it rise better and make it flaky..


PICTORIAL :

STEP : 1

Take your ingredients
Cut a portion of butter into small cubes
Take flour, salt, sugar in a mixing bowl
Add the butter cubes
Crumble them with your fingers
It will like this
Sprinkle some cold water and make dough


Shape like rectangle and cover it with plastic wrap
Place it in the fridge for 30 mins

STEP : 2

Place butter between the wrap
Make them into thin rectangle
Roll the dough into thin sheet
Place the butter in between the dough
Wrap them from both sides
And the other side too
Cover it with wrap 
Again place it on the fridge

STEP :3

Take the dough from the fridge
Place the cold dough between the plastic wrap
Roll them
Fold them one side
Other side too
Again roll them to rectangle
Again fold like this

Roll them 
Fold them

Cover them and put it into the fridge for 30 mins

Continue the above step for 3 to 4 times... This way you will gets lots of layers

Place in between the pastic sheets
Roll it into thin sheet
Cut the sides
Now it's time to square as you like
Homemade pastry sheets are done...
