Pindi Chana Fry / Spicy Fried Chick Peas


A popular variation of the versatile chole, this is different from the regular preparation in terms of texture and colour. Pindi chana fry is a dry dish, where the chole are coated lightly and fry it in the oil. The pindi chana are usually tangy and spicy chickpeas rawalpindi style... It is a best evening snacks with a cup of ginger tea.. The chaat masala make execallent falvour to this recipe.. 


It is a popular punjabi heartly, healthy, protein packed dish with minimum ingredients.. It is a dry dish there is no onions and tomato used, it makes for a wholesome meal when served with a green salad. Since its quick than the other chana recipes i have made, I have decided to make it regularly. Why i didnt make the pandi chana earlier.


I wanted to make for a long time and finally managed to make this a few days back. This was again an awesome and spicy chana recipe that is made for the indian taste buds....I have adaped this recipe from the chef harpal singh on youtube.. I hope that you try this yummy dish and let me know how it comes out.. 

Preparation time : 10 mins
Frying time : 10 mins
Serve - 3 
Cuisine - punjabi 

INGREDIENTS : 

FOR COOKING CHANA :

White chickpeas / Kabili chana / chole - 250 gms
Salt - 1 tbspn
Water - 2 cups

FOR MARINATION :

Gram flour - 2 tbspn
Rice flour - 1 tbspn
Kasmiri chilli powder - 1 tspn
Garam masala powder - 1/2 tsp
Turmeric powder - 1/4 tspn
Chaat masala powder - 1/2 tspn
Ginger - 2 tspn (minced)
Coriander leaves - few (chopped)
Water - 2 tbspn
Salt - as needed

Oil - for frying

METHOD :

  • Soak the chana for 8 - 9 hours, boil the chana with salt and water in a cooker for 3 whistles and drain it.
  • In a mixing bowl add all the ingredients gram flour, rice flour, chilli powder, garam masala, turmeric, chaat masala, ginger, coriander, salt.
  • Mix well and add in boiled chana, little amount of water and mix well.
  • Now heat a pan with oil and when it is heated drop the chana one by one into oil.
  • Fry it for 5 mins till it get grispy..
  • Drain it and serve hot.. 


PICTORIAL :


Take a chana in bowl
Soak it for 8 hours
When it soak add to cooker
Alittle bit of salt
Whistle it for 3
Now its done, drain it
Take the ingredients along with boiled chana
In a mixing bowl add gram flour, rice flour
All the spices
Salt
Chopped ginger
Chopped coriander
Boiled chana
Mix well
Add some water
Mix evenly
Heat pan with oil
Drop it one by one
Fry till crispy
Drain it in a tissue
Now it's ready
