Keerai Rice / Spinach Rice


Keerai / spinach rice is a another type of variety rice. It is a heathly greens rice recipe... Its a simple one pot dish loaded with nutrition from the greens... I used basmathi rice for spinach rice preparation Normal rice should also be used for this recipe. Healthy and delicious rice with spinach is serve with mushroom saute, it is a best combo meals. I have mostly eaten spinach in the form of masiyal, poriyal, kootu during childhood days.



Spinach / keerai rice is one of my all time healthy and favourite dish to make. I make it quite often to serve it with veg - gravies. This recipe is my own thinking because my kids didn't like spinach. But in this recipe spinach blend with the rice and fennel seeds gives best flavour to this recipe.

INGREDIENTS:

Spinach / Arai keerai - 1 bunch (cleaned and chopped finely)
Basmathi Rice - 1 cup (soak for 15 mins)
Onion - 1 (sliced)
Green Chilli - 4 (sliced)
Ginger garlic paste - 1 spn
Cumin seeds - 1/2 tspn
Sombu - 1/2 tspn
Cinnamon - 2 (small sticks)
Salt - As per need
Ghee - 3 tbspn
Coconut milk - 1 1/2 cup

METHOD:

  • Wash greens and chopped finely and keep aside.
  • Grind coconut in a blender and take coconut milk. keep aside.
  • Wash and soak the rice for 15 mins and keep aside.
  • In a pressure cooker add ghee when it heat add cinnamon, sombu, cumin seeds and mix them well.
  • Add onion and chillies, saute it for a min.
  • Now add in ginger garlic paste toss them well.
  • Then add in chopped greens and soaked rice 
  • Give a gentle mix in the oil. Then add in salt.
  • Now add in coconut milk and mix well and whistled it for 2. 
  • Open it, now fluff them evenly and then transfer to the plate.
  • Now healthy spinach rice is ready to serve hot...

PICTORIAL :


Take your greens
Wash and chopped finely
Take your ingredients
Heat a pan with ghee 
Add in cinnamon, sombu
Cumin seeds and allow to crackle
Now add in sliced onion and chillies
Toss well in the ghee
Now add in ginger garlic paste
Add in greens
Toss well for 1 mihns
Add in soaked rice
A good amount of salt
Mix gently
Now add in coconut milk
Mix well
Close the lid and whistled for 2
Now its done
Fluff the carefully
It's ready
Serve hot
