Kohlrabi (noolkol) Sambar



Sambar is most frequently made main dish of the south indian families. There are varieties of sambar prepared at various home. The sambar powder for the sambar is made in two way. one is use fresh flavour powder and other is stored sambar powder. And I use the stored sambar powder to this dish. This sambar can be mixed with rice or any roasted vegetables or papad. 


This version of sambar has noolkol as it's vegetable. It is low calorie vegetable and rich in vit - c, calcium, iron. This sambar is totally different and it very simple dish. So try this healthy sambar at home and comment me how it is............

INGREDIENTS :  

Boiled toor dal - 1 cup
Tamarind extracted water - 2 cup
Noolkol - 1 or 2 (cut into medium size)
Sambar powder - 3 tspn
Onion - 1 (chopped)
Tomatoes - 2 tspn (chopped)
Green chilli - 2 (sliced)
Coconut - 1/4 cup
Salt - as needed
Coconut oil - 1 tspn

TO TEMPER :

Coconut oil - 2 tspn
Mustard - 1/2 tsp
Urad dal - 1/2 tsp
Dry chilli - 2 (broken)
Shallots - 3 (chopped)
Curry leaves - few

METHOD :

  • Cook the dal in a pressure cooker allow to cool and open, and mash well.
  • Boil noolkol seperately for 5 - 10 mins in a pan, untill they are soft. set aside.
  • In a kadai add oil, onions, chilli, tomatoes, and saute it well.
  • Now add boiled dal, turmeric powder, sambar powder, salt, and pour the tamarind extracted water, boiled noolkol and mix it well.
  • Now allow to boil untill the raw smell is gone. Now add the cooked toor dal and mix well. 
  • Let every thing boil for 3 - 4 mins. At that time take grated coconut in to a blender and grind lightly into coares form.
  • Add grind coconut to the sambar. let them to boil for 2 mins.
  • Now in another stove heat a kadai add oil, mustard, urad dal, and allow to crackle. 
  • Then add chopped onions, broken chillies, curry leaves and toss it well.
  • Now pour the tampered items into the sambar.
  • The wonderful sambar is ready to serve with papad.



PICTORIAL :


Take kohlrabi
Peel the skin and cut it into medium size cubes
Now take your ingredients
Take noolkol in a kadai
Add some water
Bring to boil
Drain it
Now heat a kadai and add oil
Chopped onions, and chillies
Add in chopped onions
Toss well untill it became mushy
Now add boiled toor dal
Add in turmeric powder
Add in sambar powder 
Tamarind extract
Good amount of salt
Add in boiled noolkol
Take coconut 
Pulse it
Into coarse form
Add in coconut
And bring to boil
Now take temper items
For temper add oil
Mustard, urad dal
Chopped shallots
Some curry leaves
Toss well
Add in broken chillies
Toss well
Pour it to the sambar 
Now it's ready
Serve
