Mughlai Mushroom Biryani / Mushroom Briyani From Mughlai Cuisine

MUGHLAI cuisine is the style of cooking developed in south asia by the imperial kitchens of the muslim empire. Mughlai food is known for it's richness and taste. They did everything in style and splendour.


I had gotten tried of studying the whole day and was carving to eat some thing exotic, spicy but home made. I think it off and today was the day to try mughlai mushoom briyani. And I am the big fan of mushroom, so I just prepared it an exciting spicy recipe.. It turned out to be a very fragrant after the preparations.. 


These will be hardly any one who does not love briyani and this one is no exception. Mushroom is so simple to prepare and tastes delicious. It can be prepared in a jiffy. Most of the mughlai briyani they were used basmati rice but for a change I used seeraga samba rice. This is the simple and easy recipe and make within 20 mins. So try this yummy biryani and let me comment how it's turn out.....

Cooking time : 25 mins

INGREDIENTS :

Seeraga samba rice - 1 cup
Button mushroom - 1 pocket
Cinnamon - 2 sticks
Ginger garlic paste - 2 tsp
Onion - 2 (sliced)
Tomato - 2 ( sliced)
Green chilli - 3 (sliced)
Salt - to taste
Water - 1 1/2 cup
Curd - 3 tbsp
Ghee - 5 tbsp
Mint and coriander leaves - few

SPICES POWDER :

Chilli powder - 1 1/2 tsp
Coriander powder - 1 tsp
Turmeric powder - 1/4 tsp
Garam masala powder - 1/2 tsp

TO GRIND :

Grated coconut - 1/4 cup
Cashew - 10
Mint leaves - few
Coriander leaves - few

PREPARATION :

  • Wash and soak the rice for 15 mins. drain the water completely and keep it aside.
  • Clean the mushroom and cut in to pieces.
  • Grind the grinding items which i have mention in the ingredients "TO GRIND" into a paste.



METHOD :

  • Heat ghee in a pressure cooker and add cinnamon sticks, sliced onions and green chill and toss them well in the ghee.
  • Now add ginger garlic paste and saute well, and then add in all the whole spices and cutted mushroom and toss well.
  • Now add in chopped tomatoes and toss it for 5 mins untill the tomatoes had mushy.
  • Then add in curd, chopped mint and coriander leaves and then soaked rice and saute it well in the masala.
  • Now add water and salt, mix and close the cooker and whistled it for 3.
  • When the cooker subside open it and fluff it. 
  • Now the delicious hot mughlai mushroom biryani is ready .
  • Serve it with onion raitha and mushroom pepper fry.
  • Click mushroom pepper fry to view.



PICTORIAL :

Take grinding items
Put it into the blender
Grind it into paste
Take rice in a bowl
Soak it for 15 mins
Take ingredients to make biryani
Add ghee in a cooker
Add in cinnamon sticks
Then sliced onion and green chillies
Gingre garlic paste
Chilli powder
Turmeric powder
Garam masala powder
Coriander powder
Grinded paste
Cutted mushroom
Add in chopped tomatoes
Toss well untill it mushy
Add in curd
Mint and coriander leaves
Drain the soaked rice
Add in the rice
Now toss well in the masala
Add in water
Salt
Mix evenly
Close it and whistled it for 3
After whistled open it 
Fluff it lightly
Now it's ready 
Enjoy it with raita and mushroom pepper fry.........
