Medhu Vadai / Ulundu Vadai


I love love love medhu vada and it is my all time favourite recipe, the texture is soft and spongy... Sunday we have this vada with any breakfast like pongal sambar, Soft idlies, Dahivada, urad dal kanji, etc.... 


My mom makes vada with a piece of banana leaf or a polythene cover for making shape of vadai. But when I see in hotel / restaurants they just using our own hand to make beautiful vadais that looks so cute. From then I started making like that it is very easy for me... So I hope that you must try this simple recipe at home and let me know how it's comes out....


Preparation time : 2 hours soak time
Cooking time : 20 mins

INGREDIENTS :

Urad dal / uluntham parruppu - 1 cup
Small onion / shallots - 10 -12 nos (chopped)
Green chillies - 2 nos (chopped)
Ginger - 1 inch pieces (chopped)
Curry leaves - a sprig (chopped)
Asafetida - 3 - 4 pinches
Salt - as needed
Water - as needed

METHOD :

  • Soak urad dal for 2 hours at least. (use whole urad dal / muzhu ulundu without skin for better result).
  • After 2 hours wash it well , drain it and grind the urad dal with onlylittle water till fiuffy. 
  • While grinder is running just sprinkled water now and then to avoid jamming of the grinder stand near till you finish grinding.
  • This whole process takes around 12 - 15 mins, you will get a fluffy white batter. 
  • Then transfer it into a bowl and in the mixing bowl add chop onion, chilli, ginger, curry leaves, salt, asafetida and knead it with your hand.
  • Now add in grinding dal and mix well, keep aside and heat enough oil in kadai.
  • Now wet your right hand well and make a small ball. And use your thumb to make hole in the middle.
  • And drop it in oil, ( invert the vadais over the oil and slightly shake ur fingers...)
  • Fry in medium flame, turn the vadais and fry till both the sides turn crispy and golden brown.
  • Now medhu vadai is ready to serve with coconut chutney.............


PICTORIAL :


Soak urad dal for 2 hours
Now it's soaked
Then drain the dal and wash it well.
Add it to your grinder
Grind it
Add in very little amount of water
Grind it..
See how it's fluffy
You will get a fluffy white batter.
Take your ingredients
Add all veggies
Knead it with your hands
Add in asafetida
Then salt
Mix gently
Now add in the grinding dal
Knead it with your hands
Now the batter is ready
Heat oil in a kadai
Wet your right hand
Take a small portion of batter
Use ur thumb to make hole in the middle
Drop it into the oil
Fry it in medium flame
Fry till both the side turn crisp and golden brown
Drain it 
Serve with coconut chutney 
Enjoy it.....
